Spaghetti BologneseIngredients
* olive oil spray * 1 onion, finely chopped * 2 garlic cloves, crushed * 2 carrots, diced * 1 zucchini, diced * 1 celery stick, diced * 100g lean beef mince * 400g can diced tomatoes * 2 tbsp parsley, finely chopped * 2 tbsp parsley, finely chopped * 1 tsp dried oregano * 125g wholemeal spaghetti Procedure 1) To make the sauce, spray a frying pan with olive oil and heat on medium. 2) Cook onion and garlic, stirring, for 5 minutes until softened. Add carrot, zucchini and celery and cook, covered, for another 5 minutes, stirring occasionally. 3) Increase heat to high. 4) Add mince and cook for 1 minute, stirring to break up any lumps, or until it has changed colour. 5) Stir in tomato, parsley, oregano and ½ cup water and simmer, covered, for 25 minutes, stirring occasionally. 6) Meanwhile, cook spaghetti in a large saucepan of boiling, lightly salted water according to the packet directions. Drain. 7) Divide 2/3 of the bolognese sauce between 2 plates. Top with spaghetti and remaining sauce. Garnish with the parmesan. |
Chicken and peach saladIngredients
* 400g pack mini chicken fillet * 3 tbsp olive oil * 4 ripe peach * , stoned and cut into quarters * 4 tsp sherry vinegar * 1 tbsp clear honey * 1 red chilli, finely chopped * 110g bag herb salad * 100g feta cheese, crumbled Procedure 1) Heat a griddle pan. 2) Toss the chicken in ½ tbsp of the oil, and season. 3) Cook for 3-4 mins on each side or until cooked through. 4) Pop on a plate to rest. 5) Next toss the peach slices in ½ tbsp oil and some ground black pepper. 6) Grill on their cut sides for 1-2 mins each side. 7) Mix the remaining olive oil, vinegar, honey and chilli. 8) Toss with the salad leaves. 9) Arrange the chicken and nectarine slices on top and scatter with the feta. 10) Drizzle with the resting juices from the chicken and eat |
Cauliflower crust pizzaIngredients
1 head cauliflower, stalk removed 1/2 cup shredded mozzarella 1/2 teaspoon dried mixed herbs 1/2 teaspoon salt 1/4 teaspoon garlic powder 1 tablespoon tomato paste 2 eggs, lightly beaten 200g of chicken breast pieces 1 cup of baby spinach 1/4 red onion 1/4 cups of sliced olives 2 eggs Procedure 1) Preheat the oven to 200 degree 2) Break the cauliflower into florets and pulse in a food processor 3) Steam in a streamer basket and drain 4) Combine the cauliflower with the mixed herbs, mozzarella cheese, salt, garlic and eggs 5) Move to the baking tray and spread into a circular shape 6) bake for 20mins 7) spread the tomato pates on the cauliflower dough 8) add the toppings such as chicken breast, onion, spinach, olives and cheese on the top 9) bake an additional 15mins |
